fix: use zsh idioms and quote variables in shell config

- Use [[ ]] instead of [ ] for conditionals (zsh idiom)
- Quote variable expansions in ZINIT_HOME checks and dirname call
- Quote dollar-1 in mkcd function
- Remove extra blank line in .vimrc
